This frozen fruit salad is a perfect dessert or snack for those warm summer days. This has been one of the most popular dishes at picnics and parties and is heavily flexible when it comes to preparation to suit the palate and preferences of anyone who is going to consume it. Apart from being a tasty dessert, this creation can remind people of the good old days and the perfect topic of conversation for your modern table.
Ingredients:
1 8 oz tub of cream cheese that is at room temperature
1 cup of heavy cream and whip it to the soft peak consistency.
3/4 cup granulated sugar
1 Pineapple chunks (20 oz can drained)
1 can of mandarin oranges, drained
1 10-ounce bag of frozen raspberries or strawberries – thawed and cut into small pieces.
25 milliliters of chopped pecans
2 sliced bananas
1/2 a cup of maraschino cherries, drained.
Juice of 1 lemon
Instructions:
To make the filling, in a large bowl, beat the sugar and cream cheese until they are well mix.
Sift in the whipped cream carefully.
Add to the mixture the drained pineapple, mandarin oranges, and diced strawberries on the creamy mixture.
Mix well until the fruits are well incorporated in the cream.
Pour over the chopped pecans and halved maraschino cherries on top of the mixture.
For the banana, slice it and in a small bowl, mix it with lemon juice to avoid the banana from turning brown before adding it to the salad.
Layer the fruit salad into a 9 by 13 inch pan, making sure to distribute the fruit salad evenly.
Cover and freeze for at least four hours, or until frozen; this makes about 8 servings.
Let it defrost for about 10–15 minutes and then can be served. Cut it into squares and have it.
Tips and Variations:
To make it a little lighter, use reduced-fat or Neufchâtel cheese instead of cream cheese and light whipped cream instead of heavy cream.
One can use toasted pecans to give it a slightly nutty taste.
The following recipe is quite flexible, and you can substitute the fruits with the ones that are in the season or your preference. Plenty of people prefer peaches, mangoes, or a combination of berries.
You can also add a splash of rum, or any orange liqueur for an added layer of sophistication.
Canned or frozen fruits should be dried with a paper towel before using for the best creaminess.
To add to the attractiveness of the dish it is recommended to place each slice on a bed of lettuce.
